“Never change a wining concept, yet, be open to evolving,” says Christian Huber, Chef De Cuisine, Alto Vino, the Italian restaurant at JW Marriott Pune. Huber has helmed delightful culinary creations and experiences at the restaurant since its inception in 2010 and has recently launched a new menu.
“I love to hand make pasta, braise meats, toss creative salads and play with a lot of fresh produce,” he says. The new menu reflects this philosophy and love as it retains old favourites and presents new dishes that speak of his desire for innovating while staying true to technique and tradition.
The menu features a choice of vegetarian, non-vegetarian and seafood preparations as well as desserts, with descriptions and attractive photographs of each on easy to browse tablets. The preparations complement the wine menu that features a good selection of Italian wines spanning a spectrum of grapes, styles and regions to make for an enjoyable Italian dining experience.
The menu conveys Chef Huber’s efforts at sourcing quality organic, local and artisanal produce ranging from juicy fresh herbs to melt-in-the-mouth burrata and work with these ingredients to create unusual dishes (such as salad with local greens of dill, red spinach and mint) keeping preparations simple and allowing flavours of ingredients to shine through, matching the flavour profiles with local preferences. Combining tastes and textures, he methodically handcrafts the elongated corkscrew pasta, Strozzapreti (meaning priest-stranglers!) in mushroom sauce and tops it with lightly fried tasty and nicely chewy enoki mushrooms. He likes creating surprise elements such as `caviar’ globules (with balsamic vinegar, vegetable stock and agar agar), ravioli with a soft pumpkin filling, and New Zealand lamb chops with a crunchy crust of mint, pecorino cheese, butter and breadcrumbs.
Over the course of the past nine years, Chef Huber has observed guests trying out new dishes and becoming increasingly aware of new cuisines and healthy eating. He has spent many happy hours in the kitchen to give preparations a different expression or twist and create new dishes. “I do it simple and make sure the flavours are coming out,” he says, adding that each preparation is complete and there is no requirement of any additions at the table like olive oil, balsamic vinegar or herbs.
So it is that diners at Alto Vino can look forward to an engaging dining experience from salads to desserts, perhaps wrapping up the meal with a special chocolate mousse. This. dessert comprises a soft layers of dark chocolate with deep flavours deliciously cloaking an unexpected centre of gorgonzola that intrigues and delights and leaves a lasting impression of a very special dining experience.
